Once Upon a Mickey Waffle – Vegan Chocolate Waffles Using Once Upon a Farm
One of my favorite parts about being a natural food blogger is seeing how many other people reach out and say that they lead an all-natural, clean eating lifestyle too. Education about food is spreading rapidly, with more and more people quickly realizing how much tastier a natural lifestyle is, as well as how much more energized it makes you feel. Since I’m very passionate about eating all-natural foods, I want to also share this love with my 18-month-old daughter. I strongly believe that eating whole foods should start at a young age, and that as a family we can all enjoy the same types of food together. My daughter Amelia was a very picky eater when I first introduced solid foods to her. However, I started giving her the baby food brand Once Upon a Farm. Once Upon a Farm are all-natural, refrigerated puree squeezable pouches, that use no preservatives, are non-GMO, and organic!
I will soon be sharing how Once Upon a Farm food helped change my daughter’s relationship with whole fruits and vegetables in a positive way, but first I want to share with you an amazing recipe for adults, toddlers…you name it! Since Once Upon a Farm worked wonders with my daughter’s level of pickiness, I reached out to them to create some recipes using their pouches, and help spread the natural living lifestyle! I love using these puree pouches in my recipes, since it’s a great way to get lots of fruits and veggies packed into one meal. For example, their Chocolate Ever After flavored pouch has a rich, chocolatey flavor, but is made from organic bananas, avocados, dates, raspberries, and raw cocoa powder. I created a delicious and easy breakfast recipe of vegan chocolate Mickey waffles, which are packed with nutrients and totally guilt-free, since I used the Chocolate Ever After food pouch!
Makes 4 Waffles
- 1 egg
- 1/2 cup coconut or unsweetened almond milk
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- pinch of salt
- 2 cups of oatmeal flour (blended rolled oats)
- 1 T Maple Syrup
- 1 ripe banana mashed
- 1 Chocolate Ever After Once Upon a Farm pouch
- Optional Toppings:
- Vegan yogurt (like So! Coconut milk yogurt) or Greek yogurt
- Sun-Shiny Strawberry Patch Once Upon a Farm flavor
Step 1: Spray a pan or waffle iron with coconut oil (I used my Mickey waffle iron). Turn on your waffle iron to heat up. Or, you can cook these on the stove top as pancakes. If doing on the stove top, heat up some coconut oil on medium heat. If you want to make your waffle Mickey-shaped but don’t have a special Mickey waffle iron like I do, you can go ahead and cook on the stove top and plop your batter in three circles to be Mickey-shaped. Since the batter is very thick, it should stay in the shape that you place it as.
Step 2: Mix your dry ingredients together (oatmeal flour, salt, baking powder)
Step 3: In a separate mixing bowl, mix your wet ingredients (1/2 cup milk, egg, vanilla, maple syrup, chocolate ever after pouch, and banana).
Step 4: Add your wet ingredient to your dry, and mix thoroughly. Consistency should be pretty thick.
Step 5: Put the batter in your waffle iron, and cook for about 5 minutes. Insert a fork to make sure it is cooked all the way through. If cooking on the stove top, cook until slightly dark brown on each side.
Step 6: Add any toppings you would like! I added yogurt to be a healthier alternative to whipped cream, and topped with a Strawberry patch (strawberry and coconut flavor) Once Upon a Farm, to act as a healthier version of strawberry sauce.
Amelia and I absolutely love these waffles, and that it allows my family to eat lots of fruits, veggies, and protein in a chocolate waffle! Who knew that was possible?
I absolutely love breaking the mold of the common misconception that healthy food is bland or boring, and I think it’s great that more and more companies such as Once Upon a Farm is reaching all ages with this message. Even though the main components of this Once Upon a Mickey Waffle might be “baby food”, since it’s all-natural and delicious, this is really anybody food!
