Rainbow Unicorn Cookies (Vegan and Dairy-Free Sugar Cookies)
Inspired by the sassy Rainbow Unicorn, star of Riley’s mind in Inside Out, I made super easy vegan and dairy-free Rainbow Unicorn sugar cookies! I made these cookies super easily by grabbing a Miss Jones Baking Co sugar cookie mix out of my pantry! These mixes are my go-to for simple baking, since they are USDA Organic, dairy-free, many of the products gluten-free, and all of the items vegan (there are instructions on how to make the cookies vegan if you choose, instead of adding in an egg and butter). To pair with the Miss Jones Baking Co. sugar cookie mix, I used the vegan, gluten-free, and dairy-free confetti pop frosting made with coconut oil (it’s a buttercream frosting, that comes with rainbow sprinkles on the lid).
I used the package instructions for the sugar cookies, then once cooled I frosted with the confetti pop frosting. Lastly, I sprinkled the rainbow sprinkles that came with the frosting on one-half of the cookie, to make inspired-by Rainbow Unicorn cookies! (Plus the round sprinkles aldo felt very Inside Out since they reminded me of the memory balls.) The cookies are wonderfully soft and chewy, and are not overly sweet.
