Paleo Almond Butter Cookies & Cookie Sandwiches

I think without a doubt my favorite dessert would be cookies! They come in so many varieties, are good warm or cold, and are amazing paired with ice cream, cheesecake, or just by themselves! In my venture to eat clean and all-natural, I have been toying with cookie recipes that are wheat-free, refined-sugar free, and are 21 day fix-approved! I love anything having to do with nut butters of any kind, but have been particularly obsessed with almond butter lately. I love that it is not only smooth and creamy, but has a slightly course texture from the ground-up almonds. My recipe for paleo almond butter cookies is simple, easy to make, and best of all delicious and soft!
The Ingredients
Makes 1 dozen cookies
- 3/4 cup Almond Butter (no-sodium added)
- 1/4 cup chopped raw almonds
- 1/4 cup of raw honey
- 4 egg whites
- 1/2 tsp baking powder
- 1 tsp cinnamon
- 1 tsp vanilla extract
- pinch of salt
Preparation
Step 1: Preheat oven to 350 F. These cookies are a one-bowl wonder! Just mix all of the ingredients together, either with a spoon or kitchen mixer. The mixture should be very thick, and a bit sticky.
Step 2: Place parchment paper on a cookie pan. Roll your dough with your hands into small balls (about 1 to 1 1/2 inches big) and place on the cookie pans.
Step 3: Very slightly flatten the tops of your cookies with your hand, and for decoration place an almond on top of each cookie. If you are going to be making the almond cookie sandwiches, just place an almond on half of the cookies.

Step 4: Bake for 12 minutes.

I served these sandwiches with room temperature cookies. If you use warm cookies, it could make the inside ingredients too runny. I simply spread one side with Greek yogurt, and one side with my homemade cherry-strawberry preserves, which you can get the recipe for here.

The creamy taste of almond butter, the sweet and tart taste of the preserves, and the fresh, chilled taste of the yogurt (plus a slight crunch from the almond on top) made these sandwiches a perfect foodie dessert!

And since Almond butter and Greek yogurt are packed with protein, a little goes a long way with these, feeling satisfied after just one sandwich.
