With St. Patrick’s Day coming up, who doesn’t love to be on theme and eat green food? With striving to live a life where I only eat natural foods, I set out to make a delicious St. Patty’s day dessert that is green, yet uses no food coloring! Inspired by one of my favorite treats, chocolate peanut butter cups, I made Leprechaun cups! The outside shell is white chocolate, matcha, and mint, topped with pistachio crumbles. The center is delicious, creamy matcha green tea.

 

Ingredients

Makes 10 candy cups

  • Leaves from 4 sprigs of mint
  • 2 cups of vegan white chocolate chips (or white chocolate chips of your choice)
  • 1/4 cup coconut oil
  • 1 Tbsp matcha green tea powder (I used Rishi matcha green tea powder)
  • Optional: Blended pistachios to top
  • Filling:
    • 2 Tbsp Matcha green tea powder
    • 1/2 Tbsp maple syrup
    • 1 Tbsp whole wheat flour

 

Instructions

  1. Tear your mint leaves into very small pieces.
  2. Melt your chocolate chips and coconut oil together onto the stove top. Be sure to melt on low heat and stir frequently so it doesn’t burn. Once melted, pour into a mixing bowl.
  3. Into your white chocolate mixture, add in your mint leaves and 1 Tbsp Matcha green tea powder.
  4. Fill a candy mold or candy cups 1/3 full with your mixture, then freeze for 10 minutes.
  5. Make your filling by mixing all the ingredients together.
  6. Top your frozen chocolate mix with a thin layer of your filling mixture, put back in freezer for 15 minutes.
  7. Fill the rest of your candy cups to the top with more of your white chocolate mixture, and top with crushed pistachios if you desire. Freeze for an additional 15 minutes. Enjoy!
