Being a vegetarian, I don’t look forward to turkey the most at a Thanksgiving table. Rather, I am most excited for the Sweet Potato Casserole! This year, to go with my Toy Story Friendsgiving, I made a “My Little Sweet Potato Casserole” recipe, and it’s a much healthier version than a traditional version. This casserole is creamy, full of flavor, and topped with a sweet, crunchy, apple walnut crumble made from GoMacro bars. - 4 sweet potatoes
- 2 eggs
- 1/3 cup maple syrup
- 1/4 cup grapeseed or coconut oil
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1 tsp vanilla extract
- 4 large GoMacro protein bars (I used Apple Walnut and Cashew Caramel, but any autumn-type flavor will be great).
- 3 Tablespoons maple syrup
- sprinkle of cinnamon
- sprinkle of nutmeg
Step 1. Peel your sweet potatoes, and cut them into fourths.
Step 2. Preheat oven to 350 F.
Step 3. Bring 8 cups of water and a dash of salt and oil to a boil, with your potatoes in the pot with it. Once at a boil, cover with a lid and allow to cook for 15 minutes (or until tender).
Step 5. Mash sweet potatoes in a large bowl, and add other casserole ingredients. Mix well.
Step 6. The topping! Using kitchen scissors, cut your GoMacro bars into tiny pieces. Place them in a pan with your other topping ingredients, tossing to coat.
Step 7. Cook until carmelized (about 5 minutes).
Step 8. Spray a pie dish or casserole dish with coconut oil spray, and place your casserole in the dish. Then sprinkle your topping on top.
Step 9. Cook in oven for 30 minutes.
Step 10. Enjoy!
