Disneyland Copycat Gumbo Recipe - Spicy Vegan gumbo - Low carb gumbo - healthy gumbo - vegetarian gumbo - gluten-free gumbo

With Mardi Gras approaching, I decided to make a vegan dish perfect for the occasion: Gumbo! Mad just how I like: Chunky, spicy, thick, and full of flavor! The recipe is inspired by the ingredients in Disneyland’s gumbo, but this is made vegan and with riced cauliflower instead of rice. It is totally guilt-free, and very easy to make.

 

Ingredients

Serves 4

  • 1 32 oz carton of vegetable broth
  • 2 Tbsp almond flour or whole wheat flour
  • 1 cup cut frozen okra (I found this at Whole Foods)
  • 12 oz can Tomato Paste
  • 1.5 cups riced cauliflower
  • 1 diced tomato
  • 1 stalk diced celery
  • Dash of Cayenne pepper (add to make to as spicy as you like)
  • ½ diced yellow onion
  • 1.5 Tbsp Cajun spice
  • Sprinkling of salt, pepper, oregano, tabasco, and garlic powder

 

Instructions

  1. Put all your ingredients into a crockpot, and mix well.
  2. Cook on high for 3-3 1/2 hours. Or, cook on low for 5-6 hours.
