To celebrate National Chocolate Cake Day, I decided to make a chocolate cake that was not only healthy, but also refined-sugar-free, vegan, super moist, full of protein, filled with all-natural ingredients, and a cake that tasted decadent, without being bad for you! Using mainly chocolate protein powder, bananas, and unsweetened almond milk, I made a chocolate cake with chocolate frosting that is to die for! Ingredients for the Cake

  • 1 cup Vega vegan chocolate protein powder
  • 2 small ripened bananas
  • 1/2 cup unsweetened almond milk
  • 1/4 melted coconut oil
  • 1 Tbsp white wine vinegar
  • 2 tsp vanilla extract
  • 1 tsp baking powder
  • 1 1/4 cup unbleached white flour
  • 1/2 tsp salt
  • Optional: 1/2 cup vegan chocolate chips or carob chips

Ingredients for the Frosting

 

Instructions 

1. Preheat oven to 350 F.

2. Mix milk, oil, and vanilla extract together.

3. Add in mashed bananas and stir well.

4. In a separate bowl, mix together flour, baking powder, and chocolate protein powder and mix.

5. Add in your white wine vinegar, and chocolate chips if desired. Dough should be very thick.

6. Put into a cake pan or loaf pan. Cover with tin foil and bake for 25-30 minutes.

6. Top with vegan chocolate frosting if you desire!

  3. In a separate bowl, mix your milk, mashed bananas, coconut oil, and vanilla together.
  4. Combine your wet and dry mixes, then add in your white wine vinegar.
  5. Lastly, add chocolate chips if desired.
  6. Put in a greased loaf pan and bake 25-30 minutes.
