Most of my readers have some sort of dietary restriction – vegan, gluten-free, dairy-free, you name it! In regards to these dietary restrictions, probably a question I get asked very frequently is “what can I eat for breakfast, lunch, or dinner that is healthy?” So often people aren’t sure what natural breakfast they can eat that isn’t loaded with sugar, that still meets their dietary needs. One of my favorite gluten-free, vegan, veggie-packed go-to is a spicy tempeh and veggie bowl! It’s very easy to make, and prep ahead of time if you choose to have it multiple times throughout the week, and I feel suits any meal of the day.

 

Ingredients

Serves 4

 

Instructions

  1. Dice your onion, chop your bell pepper into strips, and dice your zucchini.
  2. Break apart your block of tempeh into nickel-sized pieces or strips.
  3. Place a drizzle of oil in a sautee pan, and then once heated place your tempeh and veggies in the pan.
  4. In a seperate pan, heat a drizzle of oil and cook your riced cauliflower till slightly browned.
  5. Once the tempeh and veggies are cooked to your liking, place in a bowl and drizzle with some fresh sriracha and stir.

That’s all there is to it! You can either make this for three people at once, or what I like to do is dice and chop all the veggies and place the leftovers in air-tight containers so I can replace this spicy vegan breakfast bowl multiple times throughout the week.
