Peanut Butter Pumpkin Chia Seed Pudding
Can you believe that fall is just around the corner? I absolutely love what each season has to offer, and I personally had a terrific summer, so I cannot wait what fun fall has to bring! Although I’m not certain of all the activities and memories will take part with my friends and family, one thing is for sure, there will be lots of yummy fall goodies in store. And if you’re familiar with my recipes, you know that I love making things that taste sweet and indulgent, but making them all-natural and healthy!
My latest creation is a Peanut Butter Pumpkin Chia Seed Pudding. It tastes so rich, creamy, and is packed with protein, that it is the perfect breakfast to start your day or have as a treat to end your day.
This recipe serves two people, and although it takes about two minutes to stir all the ingredients together, you will need to chill your pudding for four hours, or overnight:
- 1/4 cup vanilla almond milk or vanilla coconut milk
- 1/2 cup of Greek yogurt or SO Delicious coconut Greek yogurt
- 1/4 cup chia seeds
- 2.5 T of maple syrup
- 1/4 cup pumpkin puree
- 3 T of peanut butter
Just stir all the ingredient together well and it’s ready for the next day! Since now is back-to-school time for many, this is the perfect breakfast to have to eliminate hectic mornings, since you prepare it overnight then can just eat it right out of the fridge.
If you desire, you can even top it with some more peanut butter or a little drizzle of maple syrup. Another recommendation for a tasty breakfast is making a frozen whole grain waffle, and dipping it in your pudding (or put your pudding on your waffle as a topping) for an ultimate delicious fall breakfast.
