Vegan Cinnamon Toasted Mickey Cereal

Vegan Cinnamon Toasted Mickey Cereal - Vegan, Healthy, Gluten-Free, Disney Breakfast, Homemade Cereal

Do you know what today is? National Cereal Day! In honor of this yummy food holiday, I made a vegan and gluten-free version of cinnamon-sugar cereal. With a little bit of fun flair: They’re Mickey-shaped! (Which makes them taste ten times better than food that is non-Mickey-shaped, right?) I used coconut sugar and cinnamon, but you’re welcome to use any type of sugar that suits your taste and lifestyle.

 

Ingredients

Serves 2

  • 1 1/2 cups almond flour
  • 1/2 tsp salt
  • 2 Tbsp coconut sugar
  • 1/2 tsp cinnamon
  • 1 tsp vanilla extract
  • 1 Tbsp Maple syrup
  • 1 cup water

 

Instructions

  1. Preheat oven to 350 degrees F.
  2. Mix your flour, salt, coconut sugar, and cinnamon together.
  3. Next, add your vanilla extract, maple syrup, and water to your mixture and combine.
  4. Your mixture should be sticky and moist. Like the consistency of thin cookie dough. If it’s too dry, add more water 1/4 cup at a time until you have the correct consistency.
  5. Lay a piece of parchment paper on top of a large cutting board, place your dough on top. Lay another peach of parchment paper on top of that, and roll it out with a rolling pin. (Don’t roll directly onto the dough without the second piece of parchment paper, since the dough will stick too much to the rolling pin)
  6. Using a small Mickey-shaped cookie cutter, cut out pieces of your dough.
  7. Line two cookie sheets with parchment paper.
  8. Lay your Mickey’s onto your parchment paper.
  9. Sprinkle with cinnamon and coconut sugar on top of your Mickeys.
  10. Place in oven for 15 minutes.
  11. Turn over, and place back in the oven for another 10-15 minutes.
