A Goofy Movie – Hi Dad Cake

Can you believe that it is now the 22nd anniversary of Disney’s A Goofy Movie? Time sure does fly, huh? I remember it being one of my favorite movies as a child. And even more than twenty years later, with a ’90’s throwback feel and amazing music, A Goofy Movie has stood the test of time and is still beloved by millennials. One of the most memorable scenes from A Goofy Movie is the “Hi Dad Soup” scene:

Especially now being a parent, that scene is particularly touching. I decided to get a little, well, goofy in the kitchen and make a Hi Dad Cake! Not only is this cake the perfect way to celebrate A Goofy Movie’s 22nd birthday, but it is also a perfect treat for any Disney fan, and wonderful to make for Father’s Day coming up!

Cake + Frosting Ingredients

These are the ingredients for a two-layer cake – to make a single-layer cake, cut the ingredient amount in half.

Cookie Ingredients

  • 1 1/4 cup white whole wheat or almond flour
  • 1/2 tsp baking powder
  • Pinch of salt
  • 1 tsp cinnamon
  • 2 tsp vanilla extract
  • 1 egg
  • 4 Tbsp maple syrup or honey
  • 1/2 cup melted coconut or avocado oil

Instructions

  1. Preheat oven to 325 degrees F.
  2. Make cake mix according to Pamela’s Products instructions, adding in 8 drops of red food coloring.
  3. Pour half the batter into a greased, round cake pan and bake for 30 minutes.
  4. While baking, get started on your Hi Dad cookies. Mix the dry cookie ingredients together.
  5. Then add in wet cookie ingredients, combining well.
  6. On parchment paper, form the dough into the letters “HI DAD”. If any extra dough, make extra of those letters in case one falls apart, etc. Place in oven for 20 minutes.
  7. Once the cake is done, remove and allow to cool before removing on pan.
  8. Pour in remaining cake batter and bake the other layer of your cake for 30 minutes.
  9. Make your frosting by mixing 8-10 drops of red food coloring with your frosting. Add frosting to the top of your first layer of cake.
  10. Place second layer on top, and frost all over, placing your Hi Dad cookies on top for decor.
