About Queen of Katwe
As my readers know, my two biggest loves are healthy eating and Disney, and when I have the chance to fuse the two together, I take it! On September 23rd, Disney’s newest film, Queen of Katwe is coming to theaters. Queen of Katwe is based on the true story of a young girl from rural Uganda who finds her passion in playing chess.
With the encouragement of those around her, and her love for the chess, she rises to the top of her game, becoming an international chess champion.
Healthy Black and White Cookies
I was excited to brainstorm another recipe inspired by a Disney film! For Queen of Katwe, I decided to experiment and create a recipe for healthy black and white cookies. Traditional black and white cookies have half the cookie glazed in white, and half glazed in black. I decided to make mine in a checked pattern to look like a chessboard. You can do the same, or glaze the cookie 50/50 as is traditionally done.
Yields one dozen cookies.
- 1 1/4 cup coconut flour
- 1/4 cup coconut sugar
- 1/2 tsp salt
- 1/2 tsp baking powder
- 1/3 cup melted coconut oil
- 1 1/4 cup unsweetened coconut milk
- 1 tsp vanilla extract
- 1/2 tsp lemon juice
- 1/4 cup honey
- 2 eggs
- 3 Tablespoons cocoa powder or chocolate protein powder
- 3 Tablespoons coconut sugar
- 1/2 tsp vanilla extract
- 4 Tablespoons unsweetened coconut milk
Preparing the Cookies:
Step 1. Preheat your oven to 375 F.
Step 2. Mix all of your dry cookie ingredients together in one bowl, and your wet cookie ingredients together in a separate bowl.
Step 3. Combine your wet and dry ingredients together.
Step 4. Grease two cookies sheets well with oil or butter (I used coconut oil spray).
Step 5. Either roll your cookies into a ball by hand, or use a cookie scoop or cookie cutter to place them on the pan.
Step 6. Cook for 15 minutes. Allow to cool for 15 minutes before glazing.
Step 7. To glaze your cookies, make a bowl for your “black” glaze mix and a separate bowl for your “white” glaze mix. Mix 2 Tablespoons of coconut milk with your cocoa powder or chocolate protein powder together. For your white glaze, mix your coconut sugar, 2 Tablespoons of coconut milk, and your 1/2 tsp of vanilla extract.
Step 8. Place your glazes on your cookies and place in the fridge to harden for 10 minutes before eating.
These are the perfect not-overly-sweet treat, that is a much healthier alternative than traditional black and white cookie recipes. Enjoy!
