Healthy, Gluten-free Mickey Churro Waffles

I love all-natural, healthy eating — but I also have a major sweet tooth! Especially when it comes to Disney treats. I decided to try my hand at making HEALTHY Mickey Churro waffles, which are also gluten-free, inspired by one of the most famous Disney treats, of course: the churro!

Ingredients for waffle:

  • 2 eggs
  • 1 tsp cinnamon
  • 1/4 tsp baking powder
  • 2 Tbsp coconut flour (or whole wheat flour)
  • 1 Tbsp coconut sugar
  • 1 tsp vanilla extract

Ingredients for churro filling:

  • 1/3 cup of maple syrup
  • 1 tsp coconut sugar
  • 1 tsp cinnamon
  • dash of vanilla extract

Steps:

Step 1. Beat your two eggs together with a mixer or whisk.

Step 2. Add cinnamon, baking powder, coconut flour, coconut sugar, and vanilla extract and mix.

Step 3. In a separate bowl, whisk the ingredients of your churro filling together.

Step 4. Spray a waffle iron with non-stick spray (I used coconut oil spray).

Step 5. Place half of your batter on your waffle iron. Then add half of your churro filling. Then add the rest of your batter on top of that.

Step 6. I baked in my waffle iron for about 4 minutes. Top with the rest of your churro filling, to use in place of plain maple syrup, for an added cinnamon-sugar taste!

Note: The top may look dark brown, that’s the cinnamon churro filling, it’s dark when it gets carmelized, but don’t worry, it’s not burnt!
