By evidence of my previous travel posts, its no secret that I have major wanderlust and love to travel! However, eating healthy while travelling can sometimes be a challenge. I am very passionate about healthy eating, and eating wholesome meals gives me the energy I need to have fun and be active during my travels. On my most recent trip with my family, we traveled to Santa Barbara, CA and stayed at Extended Stay America. For someone like me, who is travelling with a family and prioritizes fitness and healthy eating Extended Stay America is one of the best choices in hotels!

Extended Stay America allowed me to:

  • Cook healthy meals easily (This was a huge bonus for me, I will talk about this at the end of my post).
  • Bring my pet along
  • Live comfortably with my whole family in a hotel room without feeling squished
  • Stay fit
  • Get work done

So often, I can’t travel because I don’t want to leave my dog behind. The room I stayed at at Extended Stay America Santa Barbara was all hard wood floors, making it easy to have a dog in our room. Especially since it was raining during our stay, I didn’t want to worry about wet paws making a carpet dirty. Hard wood = having your dog tag along in your travels a breeze!

Sometimes when you’re travelling with your spouse, kids, and a pet, life can feel kind of hectic and squished being in one hotel room. However, this hotel room had a bedroom area, full kitchen, spacious bathroom, and huge living room. There was a TV in the living room AND bedroom, making it easy to watch two different things on TV so everyone gets to have their channel preference! It was also nice that there were two desks, so that both my husband and I could do work on our computers at the same time.

I am typically not a fan of working out in hotel rooms since they can be squished, and most of the time are carpeted. Since my room had a huge living room space, I was able to easily do my workouts with space being no issue at all. Staying fit while travelling on this trip was a breeze!

 

Get Work Done

When you do need to get work done here and there while travelling, Extended Stay America is a great place to do it! Not only were there two desks, but also plenty of outlets, and free wifi. Also, since the room is spacious and very clean, I felt relaxed and able to get in the work mindset. It also helps to have a full kitchen, so that I can prepare coffee or a snack easily while working!

Now for the main attraction of Extended Stay America: Their full kitchens! I requested kitchen supplies, so upon arrival in the kitchen waiting for me were:

  • Pots
  • Pans
  • Plates
  • Cutlery
  • Cutting Board
  • Bowls
  • Cups
  • Mugs
  • Spatula
  • Cooking Spoon
  • Drying rack
  • Colander
  • Can Opener
  • Dishwasher soap
  • Sponge

I didn’t have to bring along any kitchen supplies, and was very impressed with the high quality of the kitchen supplies at Extended Stay America. The cookware cooked my meals very evenly and nothing stuck to the pots or pans! Since we were only staying three days, I wanted to make healthy meals but without buying a lot of groceries to haul home. So using the same handful of ingredients, I transformed them in a few different ways to make a breakfast, lunch, and dinner! Here was my travel menu, inspired by Santa Barbara cuisine:

Breakfast: Sweet potato toast (either topped with avocado, or topped with peanut butter and apple)

Lunch: Quinoa with roasted sweet potato and black beans

Dinner: Santa Barbara Bowl

All three of these meals were vegan, gluten-free, easy to make, and equally delicious!

 

Sweet Potato Toast Recipe – Serves 4 people

Since the Extended Stay America full kitchens are equipped with a microwave, I used that to help me cook sweet potatoes. Since sweet potatoes need a large chopping knife to cut, I decided to microwave my sweet potatoes first so that they could be more easily cut up with just a steak knife.

Ingredients: 1 sweet potato, cooking oil, and toppings of your choice.

Instructions:

Step 1. Puncture wholes with a fork into a sweet potato.

Step 2. Wrap in a damp paper towel, and microwave for 4 minutes

Step 3. Cut your sweet potato length wise, like slices of toast.

Step 4. Place your sweet potato slices on a pan on the stove top, grilling on each side till slightly toasted.

Step 5. If you feel like a savory breakfast, top with mashed avocado. If you want a sweet breakfast, top with peanut butter and apples or bananas.

Santa Barbara Bowl – Serves 4

This is a take on a Buddha bowl, but with a Santa Barbara flair!

Ingredients:

  • One sweet potato
  • One avocado
  • One package of extra firm tofu
  • One can of black beans
  • Cooking oil
  • Sriracha
  • Romaine lettuce
  • One cup of dried quinoa
  • 1 3/4 cup water

Instructions:

Step 1. Bring your quinoa and water to a boil, then let simmer for 15 minutes (or cook according to your package directions).

Step 2. Puncture a sweet potato a few times with a fork, then wrap in a wet paper towel and microwaves for 3 minutes.

Step 3. Cut up your sweet potato with a steak knife into chunks (if its not soft enough to cut, microwave an additional 30 seconds).

Step 4. Drain your tofu and cut into cubes.

Step 5. Add a large drizzle of oil into your pan, and cook your sweet potato chunks and tofu till slightly darkened.

Step 6. Drain your black beans in a colander.

Step 7. Cut an avocado into slices.

Step 8. Assemble your bowl: Put in quinoa and top with sweet potato, tofu, black beans, avocado, lettuce, and top with sriracha.

Serving Size: 4

This meal will intentionally have leftover tofu, black beans, sweet potatoes, and quinoa, which I then had for lunch the next day. You can have it plain for a different flavor, or serve it up with sriracha again. And the great thing about these leftovers is that they are tasty cold or heated up!

Staying at Extended Stay America

My hotel stay was definitely beyond my expectations! I have never felt so comfortable staying at a hotel before – it had that “vacation feeling” of being somewhere new and luxurious, yet with the comforts and convenience of amenities you would have at home such as wifi, the full kitchen, and plenty of space. I also can’t speak highly enough of how courteous the manager Cindy and the rest of the staff were during our stay. I loved that I could keep with my routine of sticking to my meal plan, cooking for my family, and getting to continue to blog about food, all while visiting beautiful beach side city Santa Barbara!
