Healthy Cove Bar Copycat Recipes – 3 Ways!

If there’s one place I love to unwind at Disneyland Resort, it’s Cove Bar! With tasty food and cocktails, and a view of Paradise Pier, what’s not to love? Even when I’m not at Disney, I’m always craving that Cove Bar feel, so I made 3 healthy Cove Bar copycat recipes for when you can’t be at the parks!

 

Lobster Nachos

  • Lobster (or whitefish lobster imitation)
  • Corn tortilla chips
  • 1/2 can of Black beans
  • Shredded cheese
  • Cabbage
  • Greek yogurt
  • Chipotle Fabenaise, or other vegan or low sodium chipotle mayo.

Directions:

  1. Preheat your oven to 450 degrees F.
  2. Line a pan with tin foil, and place corn tortilla chips on it, along with plenty of cheese. Place in the oven for about 5 minutes.
  3. Put nachos on a plate, and top with black beans, lobster, cabbage, a dollop of Greek yogurt, and top with Chipotle Fabenaise.

 

Vegetarian Style Quesadilla

  • 4 Corn tortilla or gluten-free brown rice tortillas
  • 1/2 can of Black beans
  • 1/3 cup of diced Red bell pepper
  • 1/3 cup of diced White onion
  • 1 Tbsp Grapeseed oil
  • Salt + Pepper
  • Shredded cheese
  • Avocado

Directions:

  1. Dice red bell pepper and white onion. Drain a can of black beans.
  2. Combine all of this together, with your grapeseed oil and salt and pepper.
  3. Sautee in a pan until onions are translucent, set aside.
  4. On each of your tortillas, spread shredded cheese to cover half of each of your tortillas.
  5. Place your sauteed ingredients on top of the cheese, and fold in half.
  6. Cook on low-medium heat until cheese is melted and each side of your tortilla is golden brown.
  7. Serve on the side with avocado, if you like!

 

Skinny Watermelon Margarita

  • 1 1/2 shots of tequila
  • 1/2 shot of lime juice
  • 1/2 shot of agave
  • 1 large slice of watermelon

Directions:

  1. Place your watermelon slice in a cocktail shaker, and use a muddler or end of a wooden spoon to mash the watermelon to a pulp.
  2. Add in the rest of your ingredients, shake well.
  3. Pour in a cup over ice and serve.
