Coffee Butter Recipe – Vegan Recipe Using Trader Joe's Coffee Syrup

On my most recent trip to Trader Joe’s, I decided to pick up something everybody has been buzzing about: Trader Joe’s Coffee Syrup! It’s the texture of syrup but with a strong, bitter, yet semi-sweet taste of coffee. Upon tasting it, I loved that it wasn’t overly sweet, it mainly tasted like coffee with just the right amount of sweetness for a treat. And since Trader Joe’s is also famous for cookie butter, I thought it would be fun to take their Coffee Syrup and create Coffee Butter! So this morning, I put together coffee butter to serve on top of coco pancakes, and instead of regular maple syrup for my topping topped with a small drizzle of the coffee syrup.

Ingredients

  • 2 cans of coconut cream
  • 1/8 cup of Trader Joe’s Coffee Syrup

Instructions

  1. Place two cans of coconut cream in a bowl (only the solid part, not the liquid).
  2. Use a mixer on low and beat the coconut cream until softened. If from beating any liquid has formed, drain the liquid out of the bowl.
  3. Add 1/8 cup of coffee syrup and slowly beat in with your coconut cream.
  4. Drain out any additional liquid. Taste test your coffee butter, and if you prefer it to be sweeter, add a little bit of maple syrup into the mix.
  5. Place in a small mason jar and enjoy all week!
