Chocolate Covered Pretzel Energy Bites - Gluten-free energy bites - Vegan energy bites

Have you ever made energy bites? They are a dream come true to those like me who have a sweet tooth but also want to eat healthy. Energy bites are packed with protein, and other ingredients that give you energy! I typically make chocolate and almond butter energy bites, but did some experimenting to make chocolate covered pretzel energy bites. As the main source of chocolate flavor for my energy bites, I used Vega’s vegan chocolate protein powder. There’s a pretzel in the middle, chocolate insides, with a hard chocolate shell on top. It’s the perfect combination of salty and sweet:

Ingredients:

Makes 10 energy bites.

  • 16 whole grain pretzels
  • 1/4 cup walnuts or almonds
  • 1/2 cup chopped dates
  • 1/3 cup of Vega vegan chocolate protein powder
  • Pinch of salt
  • Optional: 1 Tbsp chia seeds
  • 1/3 cup almond butter or Nutella (to make it extra chocolatey)
  • 1 cup dark chocolate
  • 1/4 cup melted coconut oil

Instructions

Step 1. In a blender or food processor, blend your walnuts, chopped dates, salt, chocolate protein powder, and chia seeds until finely blended.

Step 2. Once blended, mix with your almond butter by stirring together.

Step 3. Mold your mixture into a bowl around a pretzel, so that you have a pretzel in the middle of your energy bites.

Step 4. Place your energy bites in the freezer for 15 minutes.

Step 5. Heat up your dark chocolate and melted coconut oil in a saucepan until completely melted.

Step 6. Blend your remaining pretzels in a food processor or blender, then mix your pretzel pieces with your chocolate.

Step 7. Allow your chocolate to cool off, then dip your energy bite balls into the chocolate mixture.

Step 8. Place in freezer for another 15 minutes, then enjoy!
